The amount of PAHs in foods can be affected by cooking or food processing methods (Lijinsky, 1991). The NHANES 24-h dietary recall data, and individual food code and description files, were used to create a dietary PAH variable in which foods expected to be high in PAHs and consumed by each participant were identified, using a list of keywords such as “grilled”, “smoked” or “cured” (Table S1 in the Supplemental Information).
