Abstract
Spectrophotometric studies of the effect of various watersoluble dyes permitted for food colors have been made upon blood in vitro. Every dye studied was found to react with the oxyhemoglobin of the blood, producing "reduced hemoglobin." No evidence of any methemoglobin formation could be detected.
